Okay so. I wanna say that the reason why British food is considered bland is because, amusingly, once spices became popular and cheap, poor people started using them in their food. The aristocratic classes would then NOT use spices in their food so as to not appear poor. In addition Britain's strain of heavy industrialisation controlled by the elites meant that the kind of innovative cooking defined by the peasant class fell out because now these folks were working 20-hour days in the factory. And finally, this elitism then extended to rationing during the World Wars — since the elites controlled how that worked, things like spices were considered luxuries (which had to be imported anyway) had to be cut out, meaning that the poors also had to cook without spices.
Absolutely insanely funny to consider that British food is considered bland because rich people don't like spices
