• way prettier landscapes
• much more popular country, for many good reasons
• almost all attendees are from wildly different climates to Iceland, so fewer arguments about some people liking the weather a lot more than others
• setting the UN HQ atop an active volcano would make it seem like a proper villanous lair, making existing conspiracy theories much cooler
• setting it atop an active volcano would also instill a sense of urgency to finish up and get home in those whose usual UN activities are deliberately endless bickering or wasting everyone's time
• news broadcasts may include glimpses of arctic foxes, making them infinity times better
